Breakfast: 2 slices of 2 Minute Oat Bread, toasted and slathered with cream cheese and 1/2 a sliced banana. Yum! Pretty much just like having a breakfast of porridge, yoghurt, cream cheese and banana, but better.
Lunch: I had a craving for pikelets with whipped cream, so I played with the Healthy Pancakes recipe, swapping the oat flour for buckwheat flour and upping the Xanthum gum to 1/2 tsp. It worked well! I ate 4 or 5 Healthy Pikelets with whipped cream and just a drizzle of pure maple syrup. Yum!
Dinner: Failsafe Meatloaf with Carrot & Parsnip Mash and Luscious Leeks. Yum!
Have you noticed I've said "Yum!" a lot? What can I say - this food is delicious! Eating lots of good tasting food AND sleeping better at night AND losing weight! What's not to like?!
How I feel: good! Slept pretty well Wednesday night (for me). I seem to sleep for 4-5 hours, then wake up and not go back to sleep for at least a couple of hours, if at all, and then only for an hour or so. Oh well, much better than only 2 hours sleep. Hopefully it will lengthen out in time.
