Tuesday was another day I had to spend on paperwork and in front of the computer. Tuesdays my girls have to go out in the evening to various commitments, so we need to eat on time. A quick and easy or well planned dinner is essential on Tuesdays. This week's casserole has limitless variations, and can be cooked on the stovetop, in the oven or in a slow cooker - as you prefer.
Breakfast: Buckwheat Granola with a dollop of Greek yoghurt and milk Lunch: 2 bowls of Quick Pumpkin Soup. Doesn't look great but was YUM! Snacks: none |
Dinner: Basic Casserole (lamb with tomato paste instead of stock) with brown rice and Martha's Green Beans |
Exercise: I woke to a very hard frost and didn't want to walk until it warmed up a wee bit, but then got busy so it never happened. Grrr. Tomorrow, must walk!
How I feel: I didn't sleep at all Tuesday night. Went to bed feeling tired and ready to sleep, but then lay awake all night, only dozing for about an hour around dawn. NOT COOL! My mind and body felt "on alert" - I have to put it down to something I ate. I've always had something of a salicylate sensitivity, though I wasn't aware of it until I developed a full-blown severe allergy several years ago. After a couple of years of careful diet, my allergy has abated, though I still avoid certain spices etc. However, I suspect the tomato paste and tomatoes in last night's casserole may have been the cause of my sleeplessness due to their high salicylate level. Either that or the rice (grains in general) are irritating my system. I haven't had either since early last week, which was before I started actually sleeping. I will have to test each separately in a few days. Other than not sleeping during the night, though, I felt good all day.
