Continued deluges led to wide-spread severe flooding; I spent much of the day slogging through water, rescuing stock, sandbagging an outside bedroom that flooded, helping clear drains etc. Not a lot of time to think about food, but with a visitor arriving after a long drive, I decided to experiment with some new ideas. A low-carb, good food day!
Breakfast: Buckwheat Granola & milk
Lunch: We didn't get around to lunch until nearly 3:30pm, due to battling floodwaters. I was certainly hungry by then, but not ill-affected in any way. We had a quick late lunch of bacon, mushrooms and eggs.

Dinner: I wanted to use some Weiner Schnitzel from the freezer. Our old favourite is crumbed, fried schnitzel. Now we're gluten-free I needed to find a good alternative, so played with some ideas, and came up with a delicious crumb mix made from ground almonds, some rolled oats, onions and herbs. We all enjoyed the resulting Crumbed Weiner Schnitzel. To accompany it I made Martha's Green Beans and also a Cauliflower Mash - I have read it is just like mashed potatoes, but wasn't sure I believed that! Sure enough, while you can still taste the cauli, it was a marvellous substitute! Next time I'll try it with some added coconut cream. Unfortunately, I completely forgot to take photos of our yummy dinner until after it has been consumed. Ah well - you'll just have to make it yourself and see how good it is!
Dessert: We had delicious Raspberry Cheesecake made by my daughter again, and she also wanted to experiment so made a small lemon cheesecake and a small lime cheesecake to try. The lime was a bit overpowering, but the lemon was delicious.
Speaking of desserts, my friend Linda started to make the Chocolate Mousse last night, when she realised she was out of chia seeds. I told her to go ahead and put the rest in the fridge anyway, and see what happened. She has reported that it set very well without the chia seeds, and tasted wonderful. :-)

How I feel: Good - though I didn't sleep very well; too much on my mind, especially a draft government document I need to critique in the morning. In hind-sight, the day's food intake was very low carb, (lower than I'd intend to repeat day after day). I'm looking forward to Monday's weigh-in.
